The specs you list for your boat are bigger than those of a F28 cat ketch, is this actually a F33?

I used to run at ~ 2600 but now hang at ~ 2200 and 4.5 knots in flat water. I did have to power home in a heavy sea at one point coming back from a regatta that was canceled for too much wind, in waves I was often down to 1.5 knots.

I might add that I race my boat more than anything else, and the breeze on Narragansett Bay is generally in the 15 knot range during the summer. If you're just looking to try it out, you might look for a used Etchells jib, it's about the right size and there are plenty of them around. If you find it's compatible you can have a real sail made that is close to the dimensions depending on how the geometry of your sheeting works.
