My experience on my F30 CK with wishbooms is that the best set up for windward is that first the fore/main sail is flattened by adjusting the outhaul. Adjust the outhaul and boom halyard to get a balance between a flat sail and one with a the right twist. The main/fore sheet needs to put the clew somewhere above the sidedeck but no further inboard than the cabin side. The mizzen also needs to be flattened and the mizzen sheet then controls the windward/lee helm. Aim is to keep the brake (rudder) fore and aft as much as possible. It is important to keep the boat footing as the underwater shape and appendages are as non-conducive to speed to windward as the ketch rig! The flat sails may also lack power until the boat starts moving and may need to be eased as you come out of a tack.

45 degrees is achievable in a reasonable 10-15kts wind and with a clean hull but any fouling and you can forget it - just keep her moving and enjoy another cup of tea/ G&T.
